Description

Pepperbox earns its garden space three times over. First come the nodding, papery flowers—purple, red, and pale pink, each dramatically marked with a dark central blotch. Then the sturdy gray-green plants produce handsome sculptural pods. Finally, those dry pods hold blue-black seeds with a nutty flavor for baking.

Reaching 3–4 feet, this heirloom has the relaxed grandeur of an old cottage garden and enough vertical structure to carry a border from flower into seed-pod season. Leave the pods standing for their architectural silhouette, gather them for dried arrangements, or harvest the mature seed for the kitchen.

Sowing & Growing Instructions

Sow directly into a finely worked, sunny seedbed in late fall or very early spring. In cold-winter climates, fall-sown seed can overwinter and germinate as the soil warms. Sprinkle seed thinly, rake in gently, and barely cover to about 1/8 inch.

Keep the surface moist until seedlings emerge. Germination is typically 7–14 days under the source conditions. Thin early if crowded, then space established seedlings 6–8 inches apart.

For culinary seed, wait until the pods are brown and dry and the seeds inside are hard and black. Cut the stems into an open paper bag, let them finish drying, then shake out and clean the seed before storing.
