‘Burgundy Beau’ wears the colors of old velvet, port wine, and very good trouble. Its domed pincushion flowers open in shifting tones of burgundy, plum, and dusky red, with pale stamens scattered across the surface like tiny pins. The blooms rise on long, wiry stems above a loose mound of finely cut foliage, giving the whole plant an airy quality despite its gloriously dark palette.

Growing roughly 2–3 feet tall in bloom, this sweet scabious is a natural for cottage gardens, cutting beds, and mixed borders where it can weave among grasses and softer flowers. Try it with apricot, blush pink, silver, or acid green—or lean into the drama with near-black violas and deep purple sweet peas. The stems are excellent for bouquets, and regular cutting conveniently encourages still more flowers. Bees and butterflies are enthusiastic visitors.

Plant in sun with well-drained soil and moderate water. It performs as an annual in many climates and may behave as a short-lived perennial where winters are mild. Deadheading prolongs the show; leaving a few seed heads gives an architectural finish and may produce volunteers. Good air movement helps keep the foliage tidy, especially in humid conditions.
