This heirloom Turnip is one of the many reasons root vegetables are making a huge comeback! Why? Because its tender young leafy tops are the tastiest for classic southern “greens” and their mild sweet roots are perfect for seasonal roasted and sauteed dishes as well as soups and mashed veggies. They’re packed with nutrition and, as their name implies, Purple Top turnips are distinctly two toned; purple above ground and pure white below. They can grow to a 5” round root, but they are by far best eaten when they are no larger than 3”. The same is true for the greens, which are much more flavorful and tender when harvested young. The tops can be harvested separately from the roots, but you’ll need to leave some greenery to nourish the turnip itself. And they’re so easy to grow in cool weather! They just want sun, average water and fertile well-draining soil and voila!...a vegetable fit for a 4 star restaurant!
