Eggplant

This variegated purple and white Italian heirloom is particularly creamy and tender and is considered one of the best by gourmets and gardeners alike. Rosy-lavender with white shading, the showy fruits reach 5-6” long, with a Rubenesque teardrop shape. With a mild, non-bitter flavor and a robust form, this variety is ideal for slicing, baking or roasting. It’s also perfect for stuffing with savory fillings such as cooked Italian sausage topped with Pecorino Romano. Pick when about 5-6” and still brilliantly shiny, before seed formation begins. This traditional variety is best adapted to regions with warm nights. Plant in fertile, well-drained soil that is rich in organic matter. Eggplant also benefits from a lot of calcium, so add lime to the soil before you plant. Plant in full sun. Maturity date is 75-90 days. Deer resistant.
