Dandelion ‘Red Rib’ (Chicorium intybus) We are sometimes asked for low maintenance drought tolerant perennial edibles and this plant fits the bill! This “dandelion” is similar to some of the common edible weeds you are probably familiar with (Dandelions, Chicory and Purslane) but is bred for its better flavor and showy stem color. The taste is slightly bitter, but less than its wild brethren and is sweeter early in the season. You can’t beat this green for nutritional value, either. It’s just domestic enough to belong in the garden and just wild enough to grow there with very little assistance. The roots are edible as well, as are the periwinkle blue flowers, which arrive in Summer and are a great treat to your local insects! To 18” tall and wide. |
