Scorzonera hispanica “Black Salsify”

INTENSELY CHOCOLATE SCENTED!  Truly! Originating in the Mediterranean, this tough, reliable, perennial root vegetable has been cultivated since ancient times and is currently popular with fancy French chefs – making large, nutritious, carrot-like roots with a flavor that’s a cross between oysters and asparagus. Flowers are 2” across and reminiscent of dandelions, but I think they’re pretty! I keep mine it a pot for easy-to-reach scentsual pleasure! Best in rich, loose soil. Bees and butterflies. To 3’ tall.
